Apple Cranberry Crumble
5-6 medium to large tart apples, peeled and cored and chopped into 1/2-inch slices
1 cups fresh cranberries, halved
2 T freshly squeezed lemon juice
1 c date paste, divided
1 T ground cinnamon
½ t ground cloves
1 to 1 1/2 c rolled oats
1. Preheat the oven to 370 F.
2. In a large bowl, toss together ¾ c of the date paste with the apples, cranberries, lemon juice, and cinnamon until the fruit is evenly coated. Spread the fruit mixture evenly in silicone 9 x13 baking pan.
3. Add about ¾ c of the apple cranberry and date and spice mixture to a bullet blender, and pulse until thick apple sauce is achieved and stir together the remaining ¼ c of date paste and the oats. Use a spoon to evenly scatter the oat topping over the fruit in the baking pan.
4.Bake for 30-40 minutes, until the filling is bubbly and the topping is golden.
My name is Heather and I’m from Portland, Oregon. I am eating a plant-based, whole foods, unprocessed diet, with no sugar, oil, flour, or alcohol to take off weight and regain my life. I once weighed over 436 lbs and have released over 300 lbs eating this way and walking for exercise. I call my channel The Butterfly Effect because I believe that all the small choices you make, over time, add up and have a huge effect on your life. I wanted to show people like me who have 100, 150, 200 or more pounds to take off that it can be done and we can do it together. I am far from perfect and have struggled with compulsive eating and been overweight for all of my life, but there is hope for me and there is hope for you too. What can you do, today, to bring you closer to your goals tomorrow? Please consider giving my videos a thumbs up, commenting and subscribing. I would be incredibly grateful for your support on this journey!
