Apple Cranberry Crumble
Ingredients
5-6 medium to large tart apples, peeled and cored and chopped into 1/2-inch slices
1 cups fresh cranberries, halved
2 T freshly squeezed lemon juice
1 c date paste, divided
1 T ground cinnamon
ยฝ t ground cloves
1 to 1 1/2 c rolled oats
Directions
1. Preheat the oven to 370 F.
2. In a large bowl, toss together ยพ c of the date paste with the apples, cranberries, lemon juice, and cinnamon until the fruit is evenly coated. Spread the fruit mixture evenly in silicone 9 x13 baking pan.
3. Add about ยพ c of the apple cranberry and date and spice mixture to a bullet blender, and pulse until thick apple sauce is achieved and stir together the remaining ยผ c of date paste and the oats. Use a spoon to evenly scatter the oat topping over the fruit in the baking pan.
4.Bake for 30-40 minutes, until the filling is bubbly and the topping is golden.
